COFFEE VARIETIES & MILLING PROCESS: Indigenous landraces and heirloom cultivars, fully washed
When you drink a washed Ethiopian light roast, you're drinking the most authentic expression of the plant that started it all. This one comes from Kochere, a district in the coveted Gedeo Zone, home of the Yirgacheffe coffees prized for their layered delicacy and floral clarity.
It's a fully washed coffee: the fruit is removed from the beans, which are then fermented and washed clean before drying. That careful process is what gives a great Yirgacheffe its clean, tea-like character in the cup.
The result: a bright, refreshing splash of lemongrass upfront, balanced by a deep, stone-fruit sweetness reminiscent of fresh plum. A sophisticated thread of Earl Grey tea weaves through the mid-palate, pulling everything into focus with a lovely, clean floral finish. The body is velvety without weight, the acidity lifted without sharpness, and the balance is the kind you stop and notice.
