Colombia’s Sotará region, nestled within the department of Cauca, is home to a collective of dedicated smallholder farmers whose expertise and care shine through in every cup. This exquisite lot, the Sotará San Isidro, is the result of a collaborative effort led by Banexport, a Colombian export company committed to elevating quality through meticulous farm management and innovative processing techniques. By working closely with producers, Banexport ensures that each harvest reflects the vibrant terroir of the region while promoting sustainable agricultural practices.

This full natural Castillo variety is a testament to both tradition and innovation. Carefully hand-harvested cherries are delivered to a centralized mill where they undergo a precise post-harvest process. Using advanced technology, the cherries are sorted based on pH, Brix, and acidity before being fermented in sealed bioreactors, creating a controlled microbial environment that enhances complexity. Instead of the traditional depulping and washing, this coffee undergoes a meticulous drying process in a greenhouse with regulated airflow and temperature, preserving water and ensuring a slow, even drying curve.

The result is a beautifully sweet and balanced cup, bursting with vibrant berry notes, a touch of candied ginger, and a rich dark chocolate finish. Each sip reflects the dedication of the producers and the impact of their meticulous processing techniques.
