COFFEE VARIETIES & MILLING PROCESS: Indigenous landraces and heirloom cultivars, fully washed and dried on raised beds
Ethiopia is where Arabica coffee is believed to have first evolved, and the heirloom cultivars grown here are the most authentic expression of the plant that started it all. This one comes from Limu Seka, at the top of the Jimma Zone in Oromia, at 1,900 meters, high enough that cherries ripen slowly and build layered sweetness.
It's sourced through Fahem General Trading PLC, whose estate buys cherry daily from almost 3,000 surrounding smallholder farmers. The cherries are depulped, fermented underwater for about 12 hours, soaked in fresh water for another 12, then washed and dried on raised beds for 7 to 10 days. Fahem reinvests a portion of its profit in the community each year, funding schools, grain mills, tools for smallholders and local infrastructure.
The result: bright, honest blueberry up front, black tea threading through the middle and a creamy finish that lingers long after the last sip. Velvety without weight, lifted without sharpness.
